This is the Chocolate mousse i grew up eating. Rich, velvety and decadent; while still light and fluffy. The dark chocolate ganache base is aerated with egg whites as opposed to whipped cream which gives it a much lighter mouth feel.

A perfect match with with our speculoos biscuits or pallets bretons.
